No Meat Spaghetti

This is super easy to make, and tastes pretty good. Sean always prefers meat sauce, but this is an excellent alternative.  I dump everything in a pan and simmer for an hour.no meat spaghetti

Sunday Special: Meatballs and Spaghetti

Now that the snow has FINALLY melted, we’ll soon be in full swing working outside for the growing season. I’m trying to take opportunities to cook some more time-consuming meals now, before we hit the growing season (a.k.a. grilled cheese season).
I didn’t plan on a little trouble with the chickens last Sunday, so although we ate the time-consuming meal, it was just a little bit late.
The spaghetti and meatball recipe is from Simply Recipes. I don’t follow it exactly, because I usually have to adjust for the ingredients we have on hand.

Friday Night Spaghetti

Thumbs up all around on Friday night’s dinner.  That always makes me happy.

It was also an easy meal.  That makes me happy, too.

I used the bread machine to mix up the dough for rolls, took a break from work to shape them and set them to rise.  I even remembered to turn the oven on to preheat. Then, I forgot all about the rolls until a couple of hours later.  Oops.  Oh, well; they turned out just fine.

I talked Sean through cooking the pasta while I continued to work.  He’s an experienced macaroni cooker, so I’m not sure why he was unsure of the process.

Heated a can of green beans from last year’s garden.  Pulled a jar of our applesauce out of the fridge.

I’d remembered to take some leftover sauce out of the freezer.  Homemade with hamburger and our own tomatoes (canned).  It was a little sweet, but the flavor was good.

Quick, filling, tasty dinner.

Snow Day Spaghetti

We all like spaghetti.  When we make the sauce ourselves, meatsauce is the favorite.  When kind neighbors bring us homemade sauce, we eat it as is!  I boiled up the spaghetti, heated the sauce, opened the package of breadsticks (all from our neighbors!), and made a salad out of the end of a head of lettuce.  We had peas and applesauce, as well.  Quick and easy meal- good way to end a bitterly cold day.

Well, I guess we really ended it with the last of Sunday night’s lemon cake and hot chocolate.
