We were going to have black bean and corn quesadillas, but we have already eaten all of our black beans from last year. So, I cooked up some of the Vermont cranberry dried beans, heated them with some frozen corn, paprika, salt, and pepper, and added pepperjack cheese. The pepperjack might have added a bit too much heat, but no one complained.
We had 2 mushrooms going bad in the fridge, so I got to eat put those in my quesadillas. Mushrooms in quesadillas are such a happy treat.
Mark’s quesadillas had a tiny bit of red pepper added to them. He seemed to like them.
Sean liked his quesadillas, sans extra veggies.
We also fixed a salad.
Everybody liked dinner. wow! That’s happening a lot these days!
