I blame tonight’s dinner on Alton Brown. We tried one of the “Central American” recipes I found while waiting for his blueberry muffins to cook. I guess that means he gets the credit for last week’s Coconut Chicken with Mango Chutney, which was great.

Both Mark and I thought Black Bean and Pineapple Enchiladas sounded fun and tasty. Sean doesn’t like pineapple, so I substituted corn for pineapple in his.
The result didn’t taste bad, but it wasn’t especially good, either. I would choose it from the menu if the other options were tripe and stuff like that. Otherwise, not really a meal that anyone here would request.
