Indian “take-out”

day was perfect to enjoy it, along with rice and naan.  I used a new recipe for naan- it has an egg and milk in it, and worked for mixing in the bread machine. 

So tonight’s dinner was take-out, in that we took it out of the freezer.  Mark and I agree that this is a good way to use up eggplant.  Sean ate  a little, but we had some frozen bbq chicken legs in the freezer that I took out for him 🙂

The naan cooked up very differently than other recipes I’ve tried, but Mark and Sean both liked it much better.  It’s definitely easier to make, and I think we can tweak it to make it a little more tender.

Mark taught me how to cook regular (not instant) rice when we got married.  It almost always turns out perfectly.

Nice dinner for a gloomy evening.
